Before moving to Colorado, I existed in a green chili-free world. Three years ago, my whole world turned upside down. I slowly became accustomed—and now totally addicted to—green chili. To those outside the Centennial State, it may seem foreign, but once you try it you’ll be hooked. It’s popular smothered on burritos—especially those of the breakfast variety—as well as on its own. My personal favorite is the Waylon’s Green Chili at Castle Cafe in Castle Rock, served spicy with loads of pork and a warm tortilla. It’s so good, I’d marry this chili without a prenup.
